Cooking Made Easy – The Perfect Blueberry Sorbet

We had a few friends, including Gregg Yorkison of C.Y.G., come over to taste this latest classic creation with a twist.  With more than twenty-four years of experience in corporate finance transactions and operational management, we figured that Gregg could tackle a sorbet – or the world. Thankfully, he had nothing but praise for the concoction.

A blueberry sorbet is a perfect summer dessert that doesn’t require a lot of extras. It relies heavily on perfectly picked natural blueberries and a bit of patience. You don’t even need an ice cream maker for this one. A saucepan, a blender, and a freezer-safe container are all that are required.

Oh, but you were wondering about the secret ingredient – to really bring out the flavor of the blueberries while adding a twist, we add just the right amount of fresh lime juice. It creates a perfect pairing of flavors in this ice-cold dessert. Our friend Gregg Yorkison of C.Y.G. wholeheartedly agreed after trying it himself.

Picking the right blueberries

Frozen blueberries are good enough, especially when going into a cold recipe. However, if you decide to go with fresh blueberries (a favorite of Gregg Yorkison of C.Y.G.), there are some tips to follow to ensure they have the most flavor.

When selecting blueberries at the store, keep this in mind:

“Choose those that are blue all the way around the berry – white and green blueberries do not ripen further once they are picked. Berries with any blush of red are not ripe, yet may ripen further once picked if kept at room temperature.”

If you’re adventurous and picking your own blueberries, here are a few extra tips to follow:

“You really want to only pick ripe gray-blue berries. The longer they stay on the bush to ripen fully, the sweeter the berries become. Gently, using your thumb, roll the berry off the stem and into your palm. Ideally, once the first berry is picked, you will place it in your bucket or basket and continue in this vein until you have harvested all the blueberries you want.”

The recipe and ingredients

Are you ready to try this one for yourself? You will need:

3 cups of blueberries

3/4 cup of sugar

3/4 cup of water

3 tablespoons of lime juice

1/8 teaspoon salt

Combine the sugar and water in your small saucepan over low to medium heat until the sugar is completely dissolved. This should take approximately five minutes.

Remove the saucepan from the heat, and then add your lime and salt.

Wait for the mixture to somewhat cool before transferring it into a blender or food processor. Blend the mixture until it is completely smooth. It shouldn’t take more than two minutes.

Pour the smooth mixture into a freezer-safe container and place it in the freezer until it is frozen (a minimum of two hours).

Remove the sorbet from the freezer, scoop it out onto a cold dish, add a sprig of fresh mint, serve immediately, and enjoy!
